STUFFED PEPPER CASSEROLE – LOW CARB, KETO, GLUTEN-FREE

Description

When you want to eat stuffed peppers, but want to eat on the table within 30 minutes, a quick and relaxing pepper casserole dish is your best choice! By softening the peppers while roasting the meat in the oven, you can cut cooking time for this dish in half!

Ingredients

  • 12 oz cauliflower rice
  • 4 bell peppers, quartered stems and seeds removed
  • 2 cups mozzarella cheese
  • 1.5 lb ground turkey
  • 1 cup marinara sauce (no sugar added)
  • 1.5 tsp salt
  • 1.5 tsp Italian seasoning
  • 1.5 tsp garlic powder

Instructions

    • Preheat the oven to 400. Spray a large casserole dish with cooking spray and add the peppers. Cover with foil. Bake for 20 minutes.
    • Meanwhile, brown the meat in a large frying pan. Add the cauliflower rice and seasonings.
    • After the peppers have baked for 20 minutes remove the pan from the oven. Top the peppers with the cooked meat. Drizzle on the marinara sauce and sprinkle with the cheese.
    • Bake uncovered for 10 minutes or until the cheese melts.
Optional: Broil for 2-3 minutes to brown the cheese.
