STUFFED PEPPER CASSEROLE – LOW CARB, KETO, GLUTEN-FREE

When you want to eat stuffed peppers, but want to eat on the table within 30 minutes, a quick and relaxing pepper casserole dish is your best choice! By softening the peppers while roasting the meat in the oven, you can cut cooking time for this dish in half!

Who would have thought you could make peppers and put them on the table in 30 minutes? not me. A few weeks ago, I was staring at the fridge again at 5:15, wondering what dinner I would offer my family.

I have some turkeys, and some peppers started to wrinkle, so I need the recipe for pepper. However, if I was trading at 6 pm and dinner was not on the table, my toddler would be hungry. And my husband (Shh), so I decided to turn the traditional stuffed pepper into a casserole of stuffed pepper, quick and easy!

How to make pepper casserole
Step 1: Place the seeds and a quarter of pepper in a large casserole. Covered with foil. Bake for 20 minutes to soften.

Fill a cauliflower
Since traditional stuffed peppers are mostly white rice, I have added low sugar to cauliflower rice to keep this recipe low in carbs.

Step 2: While the pepper softens the meat, add cauliflower rice and spices.

Turkish herb chili
I am using turkey in stuffed casserole because it is much cheaper than beef and my kids don’t see any difference. If you want to use beef or pork (or mixed), continue. I used a mixture of turkey and sausage in the meatball tagine, and it was also a good mix.

Step 3: Place the brown meat on the soft pepper. Put some salt water and mozzarella on top. Bake for 10 minutes until the cheese melts. If you want to brown cheese, you can bake it for a minute or two.

What is the benefit of stuff filled with pepper?
I stuffed cauliflower with a casserole of pepper, but any green vegetables can go with it. We also like to go with Caesar salad. That is, as long as it is safe to eat lettuce. This summer, I will definitely grow it myself. There are a lot of retrievals and we can miss Caesar’s power when we can’t eat the Romans.

Ingredients

  • 12 oz cauliflower rice
  • 4 bell peppers, quartered stems and seeds removed
  • 2 cups mozzarella cheese
  • 1.5 lb ground turkey
  • 1 cup marinara sauce (no sugar added)
  • 1.5 tsp salt
  • 1.5 tsp Italian seasoning
  • 1.5 tsp garlic powder

Instructions

    • Preheat the oven to 400. Spray a large casserole dish with cooking spray and add the peppers. Cover with foil. Bake for 20 minutes.
    • Meanwhile, brown the meat in a large frying pan. Add the cauliflower rice and seasonings.
    • After the peppers have baked for 20 minutes remove the pan from the oven. Top the peppers with the cooked meat. Drizzle on the marinara sauce and sprinkle with the cheese.
    • Bake uncovered for 10 minutes or until the cheese melts.
Optional: Broil for 2-3 minutes to brown the cheese.
