I have made keto casserole several times in the past few months, and it’s really amazing that my kids haven’t complained. But they still love it. This is the only way to get some or all of them to eat spinach. This is one of my favorite keto casserole recipes when I want to eat comfortable, creamy foods.
How to make a keto casserole
The easiest way to make tin friendly to ketones is to delete starch. Most casseroles require fillings like rice, pasta, or beans. In low-carb casseroles, I use protein, vegetables and fats. Not starch.
How to make a casserole in a casserole
It is not difficult to turn it into a slow cooker. A chicken casserole can be made in a clay pot instead of an oven in just three steps.
Cook chicken in a frying pan. It is very important not to overeat the chicken, otherwise the ceramic will dry. Boil chicken breasts for 2.5 hours. Before cooking, add a little chicken broth, butter, oil, salt, and pepper.
Drain the cooking solution. Chopped chicken.
Follow the rest of the tagine recipe. Cook in the pan this time until hot.
The most important step is to drain the cooking liquid. If you don’t, you will get soup instead of casserole.
What’s in the sauce?
My typical casserole sauce is cheese, mayonnaise and sour cream. This is how I get a rich, smooth sauce without any thick canned soup.
Chicken, chicken and more
We ate a lot of chicken. It is budget friendly and easy to cook. You may remember that my husband was excited when he brought me a 2-pound shrimp bag.
When I brought a 12-pound breast of a chicken breast to the home, I felt very uncomfortable, because the fridge was already installed after my trip to Costco the day before. I managed to squeeze the package in any way and the rest we cooked.
This dish was invented in the middle of the Chicken Week, when I just needed something that the chicken wouldn’t taste. In other words, it needs bacon. This casserole bacon chicken was greeted by everyone who tried it.
What’s in the keto chicken sauce?
This is very similar to my bacon ranch chicken. If you’ve tried your liking, your chances of liking it will also be yours. Instead of dried herbs, parmesan cheese and grilled garlic powder. Instead of cheddar, there is cheese. But there is always bacon.
- 12 oz bag frozen spinach , thawed and drained
- 4 oz sour cream
- 4 slices crisp cooked bacon or 1/4 cup bacon crumbles
- 2 tsp dried minced onion
- 2 oz shredded mozzarella
- 2 tsp roasted garlic powder (this is worth the investment, the flavor is amazing!)
- 2–2.5 lb cooked chicken , cubed
- 4 oz mayo
- 8 oz cream cheese softened
- 1 cup grated parmesan cheese
Preheat oven to 350 if baking immediately. Or you can prep ahead and keep in the refrigerator for a day or two.
Combine cream cheese, sour cream, mayo, and spices and mix thoroughly. I do this first in a big metal bowl.
In the big bowl combine the cream cheese mixture you just made with the chicken, spinach, parmesan cheese, and 1/2 the bacon and mix well.
Dump into a 9×13 baking dish sprayed with cooking spray. Sprinkle remaining cheese and bacon on top
