I love salmon slices! It’s a comfortable, cheap dinner that will definitely satisfy you. These Ceaser catfish pies were one of our favorite things before using keto, but bread crumbs made this not possible on Keto. I worked for a while to make the crunchy salmon slices very delicious. I finally understand! Many recipes use ground pork skin instead of bread crumbs, but I never like pork skin, so I want to find an alternative. This recipe uses a mixture of almond flour and coconut flour. Now, before you consider using just one formula, let me explain why you should use both of these formulas. Almond flour is well-documented and helps create crispy texture when fried. However, she cannot absorb all the moisture by herself, and without it, these pancakes are still delicious, but they will spread out. Therefore, do not replace the set with anything else for best results.

These crispy salmon keto flavors are a bit soft. Add minced leeks, jalapeno and Levite spices to add your favorite flavors. We dipped in the seasoning of a low-carb jalapeno farm and it was perfect!

Ingredients

  • 2 teaspoons lemon juice
  • 2 tablespoons mayonnaise
  • 1 small jalapeño, seeded and diced
  • 1 tablespoon coconut flour
  • 6 ounces of Salmon, I use the Boneless, Skinless Pouch from Chicken of the Sea
  • 1 cup almond flour
  • 2 teaspoons Old Bay, or your favorite Cajun seasoning
  • 1 egg
  • 2 tablespoons chopped green onion

Instructions

  • All the mixture to rest for 5-10 minutes so the coconut flour can absorb any extra moisture. If you have excess moisture allow the mixture to sit a little longer in the refrigerator.
  • Heat a large skillet to medium heat and add 3-4 tablespoons of oil.
  • Using a 2 inch scoop, scoop the mixture out into 5 equal patties and pat out. See video for a helpful tip.
  • In a mixing bowl combine all of the salmon patty ingredients and mix until well combined.
  • Carefully slide the patties into the hot oil. Cook 3 minutes on each side or until golden brown and crispy.
  • Place the patties in the freezer for 10-15 minutes.
  • Remove from heat and sit on napkins to absorb an additional oil.
  • Enjoy with a low carb Jalapeno Ranch or Tarter Sauce!
