My chicken bacon ranch casiol is popular among children and adults. Fast, easy and convenient. Was tacky, mean and fulfilling. This bacon chicken tagine is one of my favorite low-carb chicken recipes.

The two can be difficult. Especially when young children wake up every night the night before and never sleep again. Repeatedly.

So … talking about this, is “Driving Via Soo” day. Fortunately, I cooked chicken in the fridge, so I managed to move the casserole quickly and put it in the oven for dinner.

I love cooking and baking, or I will not start this blog, but sometimes I just need a break. I knew that by five o’clock, my theory would be erased, and I could barely pull myself off the sofa, let alone serve a nutritious dinner.

This simple bacon chicken farmhouse recipe is really good.

Most of us devoured and stayed for a few seconds (4-year-olds had a limited menu and no casserole). However, fresh lupine student will eat for lunch tomorrow. This makes my mom happy.

Ingredients

  • 1/2 tsp salt
  • 1 tbsp minced onion
  • 1 tbsp parsley
  • 1/4 cup + 2 tbsp bacon crumbles
  • 1/2 tbsp garlic powder
  • 8 oz. cream cheese softened
  • 1/2 tsp pepper
  • 4 oz. mayo
  • 4 oz. sour cream
  • 1/2 tbsp dill (dried dill weed)
  • 8 oz. shredded cheddar
  • 1 lb. fresh broccoli , steamed and drained or frozen broccoli, thawed and drained
  • 1.5 lb. cooked chicken , cubed

Instructions

    1. Preheat oven to 350 if baking immediately. Or you can prep ahead and keep in the refrigerator for a day or two.
    2. In a big bowl combine cream cheese, sour cream, mayo, and spices and mix thoroughly.
    3. To the cream cheese mixture, you just made add the chicken, broccoli, 3/4 of the cheese, and the 1/4 cup bacon crumbles and mix well.
    4. Dump into a 9×13 baking dish sprayed with cooking spray. Sprinkle remaining cheese and 2 tbsp bacon crumbles on top.
    5. Bake until hot about 35 minutes.

Notes

My unique blend of spices is what gives this the ranch flavor. You do not need a packet of ranch mix or bottled ranch dressing. These spices and herbs also work well to make homemade ranch dressing or dip! Just mix them with sour cream and mayo for a dip. For dressing thin with a little almond milk.
